Improves hydration/column loading providing operational benefits. | GENSWEET® IGI MAX enzyme is intended for the conversion of glucose to high fructose syrup in continuous fixed bed reactors common in the industry today. Dual-enzyme converted dextrose refined by carbon and ion exchange is the preferred substrate. Acid enzyme dextrose liquor or redissolved crystalline dextrose, suitably refined, may also be used. Oxidation of glucose isomerase can occur at operating temperatures and will result in activity loss. A substrate containing at least 93% dextrose at 40 – 50% Dry Solids (DS) is recommended for isomerization. For optimum performance, the substrate should contain approximately 36 ppm magnesium ion and 110 mg/liter sulfur dioxide. |
